Pigeon Oven Ready

Pigeon is beautiful, it is an excellent source of protein, high in iron, and low in fat. It has a very rich gamey flavour enhanced because of its diverse diet. They feed on wild berries and woodland grains giving it a deep rich distinctive flavour.

Once cooked it is complemented by other strong flavours and goes very well with blue cheese, port or red wine.
